I actually enjoy vegetables a lot. More than I talk about on this blog usually but I'm a fan. Especially vegetables that are green. I enjoy bowl meals and salads especially. What catches my eye with this bowl is the veggies, healthy fats, and the sauce. Tahini can be a bit tedious to work with and if I could find a ready-made tahini dressing I would keep it on me often. I would probably add some feta or goat cheese to this. I don’t think it needs meat but maybe if I needed to use some up I would add to it.

I love Greek/Mediterranean flavors. I enjoy cava and mezze. This is a go-to flavor profile for me, especially if I’m trying to eat moderately healthy. The dressing is key here. I haven’t seen it in-store. I tend to prefer creamier dressings unless I’m making my own dressing. For this recipe, I would use either almond milk or heavy cream because I just don’t keep milk around on even a semi-regular basis. I could use the dressing for future bowl recipes if I end up enjoying it.

Creamed spinach is so underrated. I don’t understand why more restaurants don’t have it. Especially for people who try to eat low carb. I want more than just a steamed or grilled vegetable when I’m out. I also don’t know why it tends to be only at steakhouses. I haven’t been out to many restaurants and a steakhouse can be pretty expensive. The only place I know where I can get is at Boston Market. I personally think it's too runny. I want it thick and creamy like mashed potatoes
