Jalapeno Popper Chicken Casserole inspired by Eatwell
I used boneless thighs instead of breasts. I just vastly
prefer thighs over breasts in most situations. Plus it's what I tend to have. My
thighs were cooked and seasoned. I added more cheese because that’s what I like
to do. I cut the jalapenos into small cuts instead of the strips and also added
some yellow onion I needed to use up. I would make this again, it was a fun
dinner to have and I didn’t get tired of it. I had this alone with a side
salad, on top of broccoli, and on top of fried potatoes.

I need to pinch it better next time but I mostly followed the key parts of the recipe. I seasoned my tomato sauce from scratch adding Italian seasoning, paprika, garlic powder, onion powder, salt. I also didn’t have any fresh garlic but the recipe was still good. I would make this again as well, made really good leftovers.

I didn’t have fresh garlic on hand but this was still a good recipe idea. I used smoked paprika instead because I have it but I think you could easily experiment until you like it best. I didn’t make the green sauce because I couldn’t find cilantro but I will try it in the future. I appreciated this recipe didn’t want you to make a whole chicken, I probably wouldn’t do that unless I had company over or something.
